Quick note on servings: this recipe makes 2-4 bowls depending on how you serve it. I did two for a standalone meal (hence why the picture only has one patty) and it was super filling, but if you're serving it as a side, four is probably going to be your sweet spot.
Ingredients:
For the turkey burgers
- 1 lb ground turkey
- 2 tsp olive oil, plus more for cooking
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
For the burger sauce
- 1/2 cup avocado mayo
- 2 TSBP ketchup
- 1 TBSP Dijon mustard
- 1 TBSP pickle juice or apple cider vinegar
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika or chili powder
- Pinch of salt and pepper
For the burger bowls
- 4 cups chopped romaine lettuce
- 1/2 cup sliced cherry tomatoes
- 1/3 cup sliced red onion
- 1/3 cup sliced pickles
- 1/3 cup cooked, chopped bacon (optional)
- 1/2 cup shredded cheddar cheese
Directions:
- Add all of the burger ingredients to a medium size bowl and mix well to combine.
- Evenly form 4 burger patties by taking about 1/3 cup of the meat mixture and forming it into a burger patty that's about 3/4 of an inch thick. Press your thumb into the center of each burger to prevent them from puffing up during cooking.
- Heat a skillet brushed with 2 tsp of olive oil to medium heat. Once the pan is heated, place the burgers in an even layer. Cook for about 4 minutes per side, or until they reach 165 F. Remove and set aside.
- Combine all of the sauce ingredients in a small-medium size bowl and whisk well until it forms a smooth, creamy sauce.
- To assemble the bowls, place a generous amount of lettuce into the bottom of each bowl. Add 1-2 turkey burgers on top of the lettuce depending on how many servings you're making, then top each bowl with cherry tomatoes, red onion, bacon, pickles, and cheddar cheese.
- Drizzle each burger bowl with sauce before serving.
